PAPPARDELLE AL CINGHIALE
Ingredients for 4 persons:
400 gr pappardelle (thick noodles)
300 gr boar meat (cut by knife)
one onion
2 garlic cloves
bay leaves, rosemary
1 glass of red wine vinegar
1 glass of consumed red wine
500 gr can tomatoes
extra virgin olive oil
salt, pepper
Brown chopped garlic and onion in olive oil; add the meat cut by knife. Salt and roast it.
Wet the meat with the vinegar, stir and let it to reduce. In the meanwhile, cook the wine with the herbs (rosemary and bay leaves). Add the wine to the stew. Add the tomatoes passed through the food mill and cook for one hour.
Toss the pappardelle in salted boiling water, drain and serve with the sauce and parmesan cheese.
