.... MADE FRESH TALIOLINI WITH LEMON, YESTERDAY NIGHT AT GIGLIOCOOKING.
PASTA FRESCA AL LIMONE
FRESH PASTA WITH LEMON
Ingredients for 4:
350 gr ( 15 oz) fresh pasta
3-4 tbs fresh chopped parsley
2 garlic cloves, minced
extra virgin olive oil (should be 60 gr, 2 oz, but...melium est abundare quam deficere..)
zest and juice of 2 lemons
100 gr ( 3 oz) toasted pine nuts
Grated Parmigiano Reggiano ( 40 gr, 1 + ½ oz is enough, but...same as extra virgin olive oil...)
salt and pepper
Mix olive oil, garlic (pressed or finely minced) , parsley, half of the cheese lemon zest and lemon juice. Season with salt and pepper.
Add toasted pine nuts, stir well and soak for 2 h for the flavours to meld.
Cook the pasta.
Just before draining, take out a ladle of water.
Drain the pasta and then return it to the pot with the sauce. Add the water to prevent it to dry.
Sprinkle cheese.
Serve hot.

It was an amazing class! My mom and i enjoyed every minute of this class not only to learn how to cook italian food but also to understand what good food is.. we made the best pasta i have ever tasted, simple lemon, parsley, and pine nut sauce... but i had the cravings for it EVERYDAY afterwards!!! 10 days later i finally got home and made it to satisfy my cravings.. and my boyfriend thought it was the best pasta he's ever had too..!
ReplyDeleteonce we finished our dinner, Marcella kindly packed the left over for my dad who did not participate in the class... the artichoke and the chicken dish was even better the next day!
My mom and I highly recommend Marcella's class as it is such a welcoming environment that satisfies the curious minds of cooks of all levels..
