BEEF MORSELS IN BALSAMIC VINEGAR
Ingredients for 4:
500 gr. ( 1,1 Lb ) beef, second category cut (Italian sorra)
60 gr. ( 2 oz ) extra virgin olive oil
fresh rosemary
2 garlic cloves
120 ml. ( ½ cup ) balsamic vinegar
250 ml. ( 1 cup ) red wine
Flour to dust (optional)
Salt
Pepper
Optional broth
Cut the beef into cubes, approximately 3 cm large (1 inch).
Optionally dust them in the flour.
Heat the olive oil with the garlic. Add the meat on medium-high heat until it is well-browned. Add the rosemary.
Pour in the red wine and cook until it evaporates on low heat.
Check the texture of the meat. If it not enough tender, ad broth.
At the end of cooking, season with salt and pepper.
Add the balsamic vinegar and cook to reduce for one minute it stirring with a wooden spoon. Serve immediately.
