This is an elaborated Caribbean soup that takes about .... 2 days to complete, especially if everything is made from scratches.

The ingredients:

  1. a pot of home made meat broth to be prepared the day before
  2. cubes of mixed meats, usually beef and chicken
  3. fresh corn, cut in chunks
  4. plantans, peeled and cut in pieces
  5. 1 potato
  6. 1 or 2 tomatoes
  7. green bananas (to make banana balls)
  8. carrots
  9. mixed tubercolos, peeled and cut in cubes
  10. minced geen pepper, onion and a little cilantro and garlic for the Caribbean mirepoix 
  11. wheat balls (see explanation below)
  12. olive oil or coconut oil
Each of the above ingredients will be seen in details below.

 For the meat broth:
Celery, carrot, onion, tomato, potato
½ hen
500 gr ( 1.1 Lb)  beef meat
4 liter ( 1 gallon)  water

For the broth: in a big pot put the water and all the ingredients (the ratio between the weigh of the food and of the water is 1 to 4 ). Bring to a fast boil, then lower the heat, salt, and simmer for at least 2 and 1/2 hours. Filter.

 Caribbean mirepoix:
1 sweet green pepper
1 onion
1 small bunch of cilanto
1 garlic clove, minced
cubes of beef and chicken ( about 100 gr, 3 oz) for each person
olive oil or cocnut oil 

Mince the vegetables together.
Heat the oil in a lage skillet. Brown the meat.
Add the minced vegetable.Season with salt and cook for a few minutes.

Wheat balls:
tender wheat flour
a few drops of olive oil
salt to season
enough warm water to get a soft smooth doug

 Make balls the size of a nut and keep aside.

Banana balls:
Peel the green bananas. Grease your hands with a few drops of oil. Make balls with the grated pulp. Keep aside.

Plantan and  tubercolos:

 Plantan, fresh corn....

Apio: this one is added to prevent the other tubercolos to get dark for oxidation; it is discarded at the end of cooking
Preparation of the Sancocho:
Tubercolos, plantan, corn, carrots, once peeled and cut, must be cooked in the filtered meat broth. At half cooking, add the meat with its jus. about twenty minutes before the end of the cooking, add the green banana balls and the wheat balls. Season with salt.
The cooking of the Sacocho takes about two hours (plus all the previous preparation you see above).
