GELATO AL CIOCCOLATO
CHOCOLATE ICE CREAM
For
every egg yolk:
100
ml ( 7 tbs) milk
200
gr ( 6 ½ oz) fresh liquid cream
50
gr ( 1 ½ oz) sugar
100
gr ( 3 oz) dark chocolate
Heat
the milk and melt in the shredded chocolate. Let it cool.
Heat
the fresh cream with half of the sugar. Beat the egg yolk with the remaining
sugar.
Temper
the egg batter with the hot cream, then pour the new batter into the cream and
bring it to 75°. Cool it .
Mix
the chocolate with the cream batter.
Put
into the ice cream machine.
