POLLO CON LE ALBICOCCHE
CHICKEN WITH APRICOTS
Ingredients
for 4:
1 whole chicken
8 large apricots
1 large red onion
60 gr ( 2 oz) extra virgin olive oil
120 ml ( 1/2 cup) dry white wine
60 ml (1/4 cup) Brandy or Cognac
Salt and pepper
Cut the chicken in pieces and take off the skin.
Slice the onion thinly.
Wash the apricots and cut them in halves.
In large skillet, warm up the olive oil then sauté the onion gently
until translucent.
Add the chicken, salt and pepper. Lower the heat, put a lid and let the
chicken to release its water and cook inside. After about 10 minutes, during
which time stir it occasionally, add the wine and put the lid on again. After 5
minutes, take off the lid, turn up the lid and let the chicken to get brown.
Pour in the Brandy and flame it. Let the alcohol evaporate.
Add the apricots and cook until they are soft.
