The Monday after Easter is named Angel's Monday or, more commonly in Italy "Pasquetta".
Folding table and chairs, baskets full of goodies, banklets and table cloth and the un-missable "baccelli", we were ( and still Italians are...) ready for a day trip in the country side.
A fresh green fava bean (this is what we are talking about, fava beans, called "baccelli" in Tuscany) slightly dipped in salt, a little piece of Pecorino cheese: Taste of Spring.
Nothing better following the line of plant in the field, with a piece of cheese in your hand, then picking them from the plant, pop out the bean and eat it immediately: Fresh Taste of Spring.
Matteo has a garden of Baccelli right back his Bar in Giglio Island. These days you can enjoy and aperitif with just picked fava beans and Pecorino cheese...... Taste of Spring at the Seaside...
