Lesson 1 - lezione 1

Atlantic Bonito preserved in olive oil - Palamita (sarda-sarda)sott’olio
Pasta with black ink sauce - Pasta al Nero di seppia
Fried anchovies - Acciughe dorate
Stuffed anchovies - Acciughe ripiene

Lesson 2  - lezione 2
October 22nd - 22 Ottobre 2013       - 2:30 - 5:30 pm
Salted Tuna fish - Tonnina
Monk fish sauce - Sugo di pescatrice
Fish soup with cauliflower - Minestra di pesce col cavolfiore  
Prikly pears - Fico d’India

Lesson 3 - lezione 3
October 23rd - 23 Ottobre 2013       - 2:30 - 5:30 pm
Fried fish in vi negar - Pesce scavecciato
Sea Urchins - Ricci di mare
Stuffed Squid - Totano ripieno
Squid with swiss chard - Totano con la bietola

Lesson 4 - lezione 4
October 24th  - 24 Ottobre 2013       - 2:30 - 5:30 pm
Beans soup - Minestra di fagioli
Salted cod fish in sweet and sour sauce - Baccalà in agrodolce
Greater amberjack in green sauce - Ricciola al verde
Cookies with anis seeds - Biscottoni all’anice

Lesson 5 - lezione 5
October 25th  - 25 Ottobre 2013       - 2:30 - 5:30 pm
Fish soup - Zuppa di pesce (Cacciucco)
Vegetables soup with eggs - Zuppa di verdura con l’uovo
Soup of anchovies, potatoes and green beans - Zuppa di patate, fagiolini e acciughe
Salted cod soup - Zuppa di baccalà
Dried fig and chocolate cake - Panficato


The lessons take place Monday October 21st through Friday October 25th.
The price of the course is 500 euros.

Menu: Bruschetta; Potato gnocchi, Pesto sauce; Tiramisù
Thursday October 17th
Menu: Lasagne (home made pasta,meat sauce, bechamelle); almond cookies
Thursday November 14th
Menu: Risotto with saffron; Roast Pork; Chestnut crepes with ricotta

Monday December 2nd
Menu: Tortellini in Beef broth; Cannoli Siciliani
 

2014:

Wednesday January 22nd
Menu: Farro & fagioli soup; Stewed beef with balsamico; Zuppa Inglese

Thursday February 13th
Menu: Crostini with chicken liver; Sweet and sour chicken; Sweet fritters for Carnival

Thursday March 13th
Menu: Crostini with Lard and fennel puree; Ribollita; Sandy Cake with wine caramel

Thursday April 17th
Menu: Risotto with peas; chicken breast with spinach; crostata

Wednesday May 21st
Menu: Spaghetti with bread crumbs; eggplant parmesan; Chocolate cake

Wednesday June 11th
Menu : Pasta with tomato and mozzarella; Pork rolls with apricots; Stuffed peaches
